Easter Sunday falls on March 27th this year – will you be cooking something special for your family or friends? If you need help deciding what to make, we’ve got you covered with our next Colliers Hill Insiders social event! Our partners at Greenspoint Catering in Longmont will be doing a special chef’s demonstration for 10 lucky Insiders and their guests at The Overlook (650 Orion Avenue, Erie CO) on March 19th at 3:30 pm. On the menu? An easy and exotic Nordic appetizer called Gravlax, topped with aioli and paired with flawless, vinaigrette-laced greens.

If you’ve been to Colliers Hill lately, you can’t help but notice how fast – and how well the community is taking shape. Residents are already enjoying The Overlook, a 6,500 sq. ft. amenity center with a luxurious outdoor pool, fire-pit area and event lawn, as well as Rock Park, with its playground and picnic area, and an expanding trail system.

Those who love what they’ve seen so far will be very excited to learn about what’s coming in the next phases of Colliers Hill! At a recent neighborhood meeting, required as part of the preliminary platting process for the Town of Erie, attendees got a glimpse of what’s on tap for Phases II and III. Jerry Richmond, of RainTree Investments, joined representatives of Norris Design, a planning and landscape architectural firm, to present concepts that include 824 residential home lots, a 48-acre community park, numerous pocket parks, an additional four miles of trails, a future private amenity for residents (in Phase III), and an elementary school site.
