Blogger Beth at Budget Bytes uses mason jars to store her scramble combos which she fills with cooked bacon, hash browns, grape tomatoes, chopped spinach, cooked sausage, red bell peppers (the possibilities and combinations are nearly endless), and mozzarella, feta or cheddar cheese. She waits to add the egg until it’s time to microwave and stirs it up in a handled cup at intervals of 15 to 30 seconds to prevent overcooking. Voila, breakfast in a mug!
Fast and Healthy Make-Ahead Breakfast
