From the East Coast to Colliers Hill!

Transplanted from Florida more than 18 months ago, homeowners Heather and Ray Mundy and their boys immediately embraced Colorado, leaving behind the humidity and palmetto bugs, for snow, high altitude and small-town living. Moving from just outside Cocoa Beach, Florida, to Colliers Hill has been a bit of an adjustment for the Mundy family – and one they have enthusiastically embraced!

“The first year was interesting, getting used to the snow,” says Heather. “That was the biggest adjustment for me — not so much for the kids.” She and her husband Ray have two boys, Jackson, 14 and Davis, almost 12 and moved from Cocoa Beach, Florida 18 months ago.

“My husband works for Medtronic in Boulder and when we came out the first time looking for homes with our realtor, we found a house in Longmont,” Heather says. The Mundys put down a deposit but Ray told the realtor to keep looking.

“Let’s see if there’s anything else out there,” he said.

Winter Fun Indoors and Out!

When everyone gets bored with the indoor things to do at home, there are plenty of activities to explore elsewhere, and not far from your front door!

Moving Targets

In addition to our very own YMCA at the Overlook’s programs and classes, we told you last summer about the Erie Community Center on Powers Street – it’s also a great place to burn up extra energy and keep everybody occupied in the winter, too! The new interactive Winter/Spring 2018 guide is now out and covers all sorts of programs, classes, activities and special events through May 31.

If you have wee ones who need to learn how to ski and snowboard before hitting the bunny runs, Shredder Urban Ski and Snowboard Park is the go-to school of choice. The hills at this indoor facility are primed with a combination of water and wax that helps skiers slide down the surface and grip for turning and stopping. Gear is included, but you can bring your own to learn the basics and to sharpen ski skills!

Comfort Soups for Winter!

Comfort food can mean a family favorite that mom used to make, like grilled cheese sandwiches and homemade chicken or tomato soup. For some people it’s a liberal helping of yummy carbs like mac ‘n’ cheese, scalloped potatoes or simple spaghetti and meat sauce.

In the spirit of new beginnings and healthy resolutions, we’re bringing you loads of comfort soup ideas that don’t require a extra fitness workout, plus one or two guilty pleasures (that you can simply ignore if they niggle your conscience!).

And when you don’t feel like cooking, now that soup is on the menu at 24 Carrot Bistro, you don’t have to lift a finger to fill your belly with a bowl of yum. Just travel the five minutes to this amazing downtown Erie eatery (on Briggs Street) and round up a few servings!
