One-Pot / One-Skillet Dinners!

One of the best things about one-pot meals are the number of dishes you DON’T have to wash! Recipes for one-skillet or one-pot meals usually have minimal ingredients, but maximum deliciousness and even if you’re entertaining — clean-up is a breeze! 

Tastiest, Easiest One Dish Meals 

Check out blogger Denice Browning’s Easy and Delish site and you’ll find a motherload of easy one-pot and sheet pan recipes. She’s a professional chef and specializes in offering insider secrets and budget-friendly gourmet meals, and has a flair for healthy Brazilian recipes. Her One Pot Shrimp Scampi is one for the bookmark pile as is the Sheet Pan Shrimp Kabobs with Asparagus.

If you have the shrimp and only 20 minutes to get something on the table, try any of Denice’s one-skillet meals – like Garlic Shrimp Spaghetti. You can use white wine instead of chicken stock, add baby spinach and make it gluten-free, or low-carb with zoodles.

Eating Well offers 19 delicious one-skillet dinners made with ground beef — from pasta possibilities to hearty soups. For example, the Mexican Skillet Lasagna replaces noodles with tortilla strips that become tender ribbons in the cayenne and cumin-spiked sauce. Topped with cheddar and cream cheeses, this lasagna is just as soulful as it’s Italian cousin – and as filling.

If you’re a fan of veggies, red, green, yellow or orange, take a look at these healthy one-pot meals from Taste of Home. One-Pot Beef and Pepper Stew starts a collection of 44 recipes for healthy and habit-forming meal recipes. You’ll find Chicken and Vegetable Curry Couscous, Cinnamon-Apple Pork Chops, Ginger Chicken and Quinoa Stew and Chili Mac!

This recipe went viral two years ago – home chefs were going crazy for #thestew on Instagram – to the tune of 4,000 results. Created by Alison Roman of New York Times Cooking, the Spiced Chickpea Stew with Coconut and Turmeric is a stove-top stew, but we had to include it because of all the rave reviews. Alison crisps the chickpeas in olive oil, then simmers in a garlicky coconut milk (full-fat!) for what is basically a healthy stew. With ginger, turmeric and red pepper flakes the stew contains Swiss chard, kale or collard greens and mint leaves with a dollop of optional yogurt. 

Epicurious has several tempting vegan dishes worth a look in its compilation of the 67 Best One-Pot meals. One is the Squash a Vin, the other is the Coconut-Apple Dal, with shredded apples, in a velvety lentil stew seasoned with ginger.

Also spicy and intensely flavorful are Martha Stewart’s Red Lentil Soup with Crispy Fried Ginger, for an Indian-style soup with strong curry powder seasoning, and her Moroccan Meatball Soup with sweet potato, cinnamon and cilantro.

Habit-Forming Foodie Meals

This collection of one-pot meals from Spruce Eats is easily equal portions habit-forming and healthy. From the Roasted Chicken with Potatoes or Cauliflower and Sausage Roast, to Pork Chops with Hash Browns and Chicken Pot Pie with Cheese Biscuit Topping. A collection of goodness that rivals multi-pot meals!

From Hot Honey pork chops with Escarole and White Beans to Chicken Stew with Potatoes and Radishes – a comfort food paprikash —  Epicurious comes through with fish, chicken, lamb and beef one-pot meals that are long on flavor and short on prep. Keep scrolling for Salmon and Bok Choy Green Coconut Curry and Za’atar Chicken with Garlicky Yogurt!

For a Greek pasta dish made with ground beef and béchamel sauce, keep scrolling for Pastitsio, the Eating Well version made with whole-grain pasta, lean meat and low-fat dairy. It’s like a good old-fashioned American goulash with pasta that cooks right in the sauce, in the same pot.
